A cozy twist on pumpkin spice… because what’s better than coffee on a cold day? ☕🍂
Here’s how to turn a simple box mix into something special:
Cake:

Start with a spice cake mix.

Follow the box directions, but swap the water for milk and add a spoonful of sour cream for extra richness.
- 3 eggs and 1/3 cup oil

Bake as directed.
Now for the fun part — the frosting!
Coffee & Coconut Frosting:

1 stick (or more) of butter — I used more for a 9x13 cake.

1 spoonful of sour cream.

Enough powdered sugar to make it creamy and spreadable.

About a teaspoon of coffee and a few instant coffee crystals (crushed fine — make sure it’s instant, not grounds).

½ cup (or so) of sweetened coconut flakes.

Sprinkle with pecans on top.
